Ingredients:
- 2 medium-sized sweet potatoes
- 2 tablespoons coconut oil
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/4 teaspoon paprika
- 1/4 teaspoon cayenne pepper optional for a kick
- Fresh parsley for garnish
Instructions:
Peel and wash the sweet potatoes
Cut the sweet potatoes into small, rice-sized pieces using a food processor or a grater
In a large skillet, heat the coconut oil over medium heat
Add the sweet potato rice to the skillet and saut for about 5-7 minutes, or until it becomes tender
Season the sweet potato rice with sea salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper if using
Continue to saut for an additional 2-3 minutes, stirring occasionally, until the sweet potato rice is cooked through and slightly crispy on the edges
Remove from heat and garnish with fresh parsley
Serve hot as a delicious and healthy side dish!
