Sweet Potato Rice



This Sweet Potato Rice recipe is a paleo and Whole30-friendly alternative to traditional rice. It's a flavorful and nutritious side dish that pairs well with a variety of main courses.

Ingredients:

  • 2 medium-sized sweet potatoes
  • 2 tablespoons coconut oil
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional for a kick
  • Fresh parsley for garnish

Instructions:

Peel and wash the sweet potatoes

Cut the sweet potatoes into small, rice-sized pieces using a food processor or a grater

In a large skillet, heat the coconut oil over medium heat

Add the sweet potato rice to the skillet and saut for about 5-7 minutes, or until it becomes tender

Season the sweet potato rice with sea salt, black pepper, garlic powder, onion powder, paprika, and cayenne pepper if using

Continue to saut for an additional 2-3 minutes, stirring occasionally, until the sweet potato rice is cooked through and slightly crispy on the edges

Remove from heat and garnish with fresh parsley

Serve hot as a delicious and healthy side dish!
