Pasta With Peas And Torn Prosciutto Donna Hay



This pasta dish combines the flavors of sweet peas, salty prosciutto, and nutty Parmesan cheese for a simple yet delicious meal. It's a quick and easy recipe that's perfect for busy weeknights or casual entertaining.

Ingredients:

  • 300g pasta
  • 1 cup frozen peas
  • 100g prosciutto, torn into pieces
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

Cook pasta in boiling salted water according to package instructions until al dente

Drain and set aside, reserving 1/2 cup of pasta water

In a large skillet, heat olive oil over medium heat

Add minced garlic and cook until fragrant, about 1 minute

Add torn prosciutto to the skillet and cook until slightly crispy, about 2-3 minutes

Add frozen peas to the skillet and cook until heated through, about 2 minutes

Add cooked pasta to the skillet along with reserved pasta water

Toss everything together until well combined and heated through

Stir in grated Parmesan cheese until melted and creamy

Season with salt and pepper to taste

Serve the pasta hot, garnished with fresh basil leaves
