Enjoy a bowl of creamy mushroom and three bean soup that is full of earthy flavors and good for you. This hearty soup is great for cold nights and can be eaten by itself for a full meal.
Ingredients:
- 1 tbsp olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 lb mushrooms, sliced
- 4 cups vegetable broth
- 1 can 15 oz cannellini beans, drained and rinsed
- 1 can 15 oz black beans, drained and rinsed
- 1 can 15 oz kidney beans, drained and rinsed
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
Put olive oil in a big pot and heat it over medium-low heat
Add the minced garlic and diced onion and cook until the onion is soft
Put in the sliced mushrooms and cook them until they start to brown and give off their water
Put in the vegetable broth and raise the heat
Black beans, kidney beans, and cannellini beans should all be added
Mix well
Let the flavors blend for 15 to 20 minutes while it simmers
Add the heavy cream and season with pepper and salt to taste
Let it cook for five more minutes
Serve hot with fresh parsley on top
